2 tbsp olive oil
2 brown onions, finely chopped
2 garlic cloves, finely chopped
4 spring onions, cut into 3cm pieces
2 red capsicums, thinly sliced
500g beef mince, dusted in 1 tbsp cornflour (makes it crispy!)
600g pre-cooked egg noodles
1/4 cup sweet chilli sauce
2-3 tbsp dark soy sauce
2 tsp sesame seed oil
1 tbsp sesame seeds
Chopped coriander and fresh lime, to serve
In a large non-stick pan or wok, over a medium-to-high heat, place the oil, onion, garlic, spring onions and capsicum. Sauté for 2-3 minutes or until soft and brown.
Add the beef and fry for 2-3 minutes or until crispy.
Reduce the heat to low-to-medium.
Add the pre-cooked noodles, soy, sweet chilli and sesame oil and mix together.
Season well with salt and pepper to taste.
Sprinkle over sesame seeds and serve with fresh coriander and lime wedges.
